Tomato pulao/ pulav/ pilaf as the name suggests have more tomatoes added to it- both chopped and puree, so there is a nice tangy flavour in it. It is slightly spicy version like street food. For kids, you can adjust the spice level according to their taste. This recipe is perfect for lunchbox. It will be prepare in few minutes when you have pre-cooked rice or leftover rice. Instructions for how to make Mumbai Street Style Tomato Pulao:
- Firstly, take 3 medium-sized roughly chopped tomatoes in a grinder/blender jar and blend them to make tomato puree.
- Now heat 1.5tbsp oil in a large pan/ kadai and splutter 1 tsp cumin seeds. Then add 1 chopped large onion to it and sauté till translucent.
- Then add green chilies and ginger paste to it and sauté.
- Next, add chopped veggies- 1/2 green bell pepper/capsicum, 1 carrot, 6-7 French beans and 1/4 cup green peas to it. Cook until the vegetables are slightly cooked.
- Now add the main ingredient- tomato, both chopped and puree.
- Add all the spices- salt to taste, 1/4 tsp turmeric powder, 1 tsp red chili powder and 1.5 tsp pav bhaji masala to it.
- Stir, and sauté till the tomato puree cooked well and leaves oil from the sides.
- Then add 2 boiled and cubed potatoes to it and stir.
- Cook for 2 more minutes so that potatoes also absorbs the flavours.
- Next add 3 cups of boiled or pre-cooked or leftover rice to it.
- Mix them gently and cook for 5 minutes on low flame and then turn-off the flame.
- Finally, add 2tbsp finely chopped fresh coriander green and squeeze half lemon.
- Stir and mix gently, make sure rice grains don't break.
- Delicious and spicy Mumbai Street Style Tomato Pulao is ready to serve. Enjoy hot tomato rice with raita or plain yogurt/curd.

Tips:
- You can use store-bought tomato puree also, to make your work easier.
- Add more vegetables of your choice like broccoli, cauliflower etc. to make this recipe more nutritious.
- Pav Bhaji Masala is the key spice used in this recipe.
- Adjust the spice level as per your preference. You can increase or decrease the amount of both red chili powder and green chili.
- Tomato Pulao tastes great, when prepared slightly spicy and served hot.
