Fried Rice recipe has many variations, but I have shared simple and classic recipe with all basic veggies but you can add more veggies to make it more nutritious. It is also popular as Indo-Chinese street food. It is perfect recipe to make with leftover rice. Even in busy mornings you can prepare this recipe for lunchbox also. Instructions for how to make Chinese Veg Fried Rice:
- Firstly, take one cup of basmati rice in a bowl, rinse them thoroughly until water is clear. Then soak them in water for 30 mins.
- Take a large pot and add 5 cups of water and heat on high flame.
- When the water begins to boil then add 1/2 tsp salt and 1 tsp of oil in it.
- Now, add soaked basmati rice to it. Make sure to drain off all the water from soaked rice.
- Squeeze 1/2 lime/lemon to it. Boil rice uncovered for 10 minutes or or until rice is cooked 90% or just about cooked.
- Quickly strain rice in a colander and rinse the rice with cold water so that the rice stops cooking. Cool them completely.
- Now in a large kadai/pan, heat 2 tbsp oil and stir fry finely chopped garlic.
- Add the finely chopped onions and spring onions and sauté for couple of minutes on medium flame.
- Add vegetables of your choice like 1 finely chopped carrot, 1/2 capsicum and 1/2 red bell pepper.
- Stir fry on high flame without overcooking vegetables.
- Then add 2 tsp sugar, salt to taste and 1/2 tsp ground black pepper to it.
- Add 2 tbsp Soy sauce, 1 tbsp chili sauce and 1 tbsp vinegar to it. Mix well to combine the flavors.
- Keeping the flame on high, add cooked rice. Stir-fry by mixing well, making sure rice grains won’t break.
- Garnish them with green onion and Fried Rice are ready to serve. Enjoy!

6. Now, add soaked basmati rice to it. Make sure to drain off all the water from soaked rice.

7. Squeeze 1/2 lime/lemon to it. The color of rice remains white by adding lemon juice. Boil rice uncovered for 10 minutes or or until rice is cooked 90% or just about cooked. It’s important that you do not overcook rice during this step.

8. Quickly strain rice in a colander and rinse the rice with cold water so that the rice stops cooking. Cool them completely.

9. Now in a large kadai/pan, heat 2 tbsp oil and stir fry finely chopped garlic.

10. Add the finely chopped onions and spring onions and sauté for couple of minutes on medium flame.

11. Add vegetables of your choice like 1 finely chopped carrot, 1/2 capsicum and 1/2 red bell pepper.

12. Stir fry on high flame without overcooking vegetables.

13. Then add 2 tsp sugar, salt to taste and 1/2 tsp ground black pepper to it. Adjust the salt as per your taste as soy sauce has also salt.

Tips:
- Try to use aged basmati rice for best results.
- Don’t overcook the rice. If rice grains have softened or overdone, they will break when stir-frying and become mushy.
- Make sure to cool the rice completely or use leftover rice to prepare fried rice.
- Don't use extra virgin olive oil as the stir-frying is done at a high heat and olive oil has a low smoke point.
- Add vegetables of your choice like French beans, broccoli, snow peas, mushroom or corn.
- Stir-fry the vegetables without overcooking.
- For protein, include tofu or paneer.
- If you are adding tomato ketchup then skip sugar.
- Veg Fried Rice recipe tastes great when served hot with Veg Manchurian.
