Instructions for how to make Chili Chana :

  1. Firstly, take boiled chickpeas in a large mixing bowl.
  2. Add 3 tbsp maida/plain flour and 3 tbsp cornflour to it.
  3. Mix well and make sure to coat the chana well.
  4. Deep fry the coated chana in hot oil on medium flame. 
  5. Stir it occasionally.
  6. Fry till the chana turns golden and crispy.
  7. Drain off the chana over kitchen towel/napkin to absorb excess oil. Fry the remaining chana likewise and keep it aside.
  8. For preparing its sauce, Pre-heat a pan/wok then add 2 tbsp oil and then add finely chopped garlic, ginger and green chilies.
  9. Add finely chopped onion, spring onion and green capsicum to it.
  10. Saute for 2-3 mins. or till translucent.
  11. Add onion and capsicum cubes to it.
  12. Saute it for 2-3 mins, keep them crunchy.
  13. Add salt and red chili powder to it.
  14. Add white vinegar to it.
  15. Add soy sauce to it.
  16. Add sugar, chili sauce and tomato sauce to it.
  17. Saute on high flame till the sauce thickens and shiny.
  18. Add fried chana to it.
  19. Mix the prepared sauce and chana well.
  20. Garnish it with spring onions and chili chana is ready to serve. Enjoy!

Tips:

  • Soak the chana overnight and then pressure cook it well. Otherwise, it would be taste dry.
  • You can take all cornflour for coating.
  • Make sure to fry chana in small batches for best result.
  • Add chili sauce according to your spice level.
