Instructions for how to make Rice Salad:
- Firstly, take 1.5 cups of cooked/leftover rice in a large bowl.
- Then add 1/3 cup chopped lettuce, 1/4 cup sprouted moong dal, 1 finely chopped carrot and 1/2 chopped tomato to it. Make sure remove the seeds of the tomato.
- Next add 1/2 cup sweet corn and 1/2 cup boiled white chana/ Garbanzo beans to it.
- Add 1/3 chopped green bell pepper/ capsicum, 2 tbsp finely chopped coriander leaves and 1/2 cup finely chopped spring onion to it.
- Add 2 tbsp crushed roasted peanuts to it.
- Now, add salt to taste, 1/2 tsp crushed black pepper, 1/2 tsp freshly roasted cumin powder and 1 tsp chili sauce to it.
- Finally, squeeze 1/2 lime/lemon over the salad.
- Toss well, so that all the ingredients mix well with the rice.
- Rice Salad is ready to serve. Enjoy it chilled or warm as per your preference.

Tips & Alternatives:
- For warm Rice Salad, heat rice in microwave at the beginning.
- This salad can be prepared with white or brown rice.
- You can add or skip any vegetable as per your taste and availability.
- Vegetables can be added raw as I have added, or slightly steamed as per your preference.
- In place of sprouted Moong Dal, add any cooked lentils to increase the heft and protein content of the dish.
- In place of roasted peanuts, Sev or roasted chana dal or roasted cashew nuts can be added.
- In place of chili sauce, minced garlic or ginger paste or a dash of red pepper/ chili flakes can be added for a spicy component.
- You can also add chaat masala to make it more piquant.
- Rice Salad tastes great when prepared with lots of vegetables and slightly spicy.
