Burritos are filled with a savory filling, most often a meat  but for vegetarian burritos, includes rice, cooked beans (either whole or refried), stir fry veggies, vegetables such as lettuce and tomatoes, cheese, and condiments such as guacamole. Homemade Guacamole is always best to use as it more fresh and healthy. If you don't have access to Avocados then you can use simple tomato onion salsa also. I have used Mexican cheese which is basically a blend of of Cheddar Cheese, Monterey Jack, Mozzarella, Quesadilla Cheese. If you don't have access to Mexican cheese then you can use blend cheddar cheese and mozzarella cheese for this. Instructions for how to make Veg Rice & Beans Burritos:

  1. Firstly, you have to prepare stir fry veggies, beans and rice. Mix Rice and beans well.
  2. Then gather Tortillas, Guacamole, chopped lettuce, Mexican cheese, corn chips with prepared beans rice and veggies.
  3. Take one tortilla and warm it either in microwave or on griddle/tawa. Then place 2 tbsp Black beans rice in the centre.
  4. Spread 2 tsp of prepared stir fry veggies over it.
  5. Then place chopped lettuce over it and then sprinkle good amount of Mexican shredded cheese over it.
  6. Spread 2-3 tsp Guacamole and finally sprinkle some crushed corn chips over it. Adding Corn Chips are optional.
  7. To Wrap the burrito, firstly fold the short ends in, then fold one long side over the filling and gently push to ensure the fold is tight before rolling up the remainder of the burrito.
  8. Cut in half, and serve immediately. Palatable Burritos are perfect to enjoy as a lunch or dinner meal.

1. Firstly, heat 2 tsp oil in a pan and 1 cup sliced onion to it. Sauté until onion becomes translucent.

2. Then 1 cup all coloured bell pepper- Green, yellow and red to it.

3. Add 1 sliced cut Jalapeno and 1/4 cup sweet corn to it. Sauté for 3-4 minutes.

4. Add 1/2 tsp black pepper, 1/2 tsp mixed herbs and 1/3 tsp or salt to taste. Mix them well.

5. Stir fry veggies for one more minute. Veggies are ready and Keep them aside.

1. Heat 2 tsp oil in a pan and splutter 1/2 tsp cumin seeds to it. Then Add 1 tbsp finely chopped garlic and sauté till the rawness goes away or turns golden brown.

2. Add 1 cup boiled black beans and 1/2 cup water to it. Bring a boil.

3. Then add 1/4 tsp or salt to taste, 1/2 tsp red chili powder and 1 tbsp taco seasoning to it. Mix all the spices well.

4. Cook for 2 more minutes. Beans are ready.

5. Take 1 cup boiled/Jeera Rice in a bowl and then add prepared black beans to it.

6. Mix them Well. Black beans rice are ready.

Tips:

  • You can use Pinto beans also in place of black beans.
  • Try to use small rice for Mexican recipes but if you don't have you can use Basmati Rice too.
  • Warm tortillas are much easier to fold. You can microwave them under a damp paper towel for 15 seconds, warm them on a griddle/tawa on low flame.
  • Try to keep your fillings set in the centre . If you add more, your veggie burrito may not close properly.
  • Let the burritos sit for a couple of minutes so that they will set and then cut into half.
