Instructions for How to make Frankie Roll/ Kathi Roll:
- Add all purpose flour and wheat flour to a mixing bowl.
- Add ghee and salt to it.
- Add water to make a soft dough.
- Knead the dough well.
- Cover it with a cloth/ plate for 1 hour.
- After an hour, knead the dough for a minute.
- Make dough in a cylindrical shape and divide into 6 equal parts.
- Roll them and make balls.
- Take one ball and dust some dry flour on the counter.
- Roll it into 7-8 inches flat disc.
- Heat the tawa on high flame and place the wrap on the tawa.
- Slightly roast the wrap from both sides. Likewise, prepare all the wraps. Keep it aside.
- For frankie masala, mix all the spices (Turmeric powder, red chili powder, coriander powder, cumin powder, garam masala and chat masala).
- Add vinegar and chopped green chilies in a small bowl. Let it stand for half an hour before using it.
Directions for Aloo Patties:
- Add oil to a pan/wok.
- Add chopped garlic and ginger paste to a pan.
- Add 2 tbsp prepared frankie masala.
- Add boiled and mashed potatoes to it.
- Add coriander leaves to it.
- Mix them well so that, the spices blend with potatoes.
- Aloo mixture is ready for patties. Now allow it to cool for 5-10 mins.
- Now, prepare cylindrical shaped patties.
- In the same pan add 1 tsp oil and 1 tsp butter.
- Roast patties from both the sides. Keep it aside.
Assemble Frankie Roll:
- Heat a tawa on high flame then add 1/2 tsp oil and 1/2 tsp of butter.
- Roast the wrap from both sides.
- Place it in a plate. Spread 1 tsp of green chutney on the wrap. Add few carrot julienne and green onion slices on it.
- Place aloo patties on top of it.
- Then add onion slices and sprinkle prepared frankie masala on it.
- Add 1/4 tsp chili vinegar on it.
- Fold it the bottom up.
- Fold both the sides one after another, slowly.
- Fold tight and hold to prevent the wrap from opening.
- In the same manner, wrap the roll in silver foil from the bottom.
Veg frankie/ kathi roll is ready to serve.

Tips:
- Add vegetables of your choice to make frankie or kathi roll.
- Do not over stuff the frankie with stuffing, as it will be difficult to roll and eat.
- You can use whole wheat flour to make it more healthy. But if you want totally street style then prepare it as described.
- You can use leftover chapati also for making it.
