These Rawa/ Semolina Idli are equally soft and delicious as traditional rice and urad dal idli. The reaction of baking soda with the acidity of the yogurt helps in leavening the batter thereby giving it a soft and fluffy texture. This flavorful batter is then steamed in an idli maker to make fluffy savory cakes. I have shared the recipe prepared in microwave, but you can prepare it in the stove-top idli maker also by following same recipe.

Instructions for how to make instant Rava Vegetable Idli:
- Firstly, take 1 cup Rava/ Sooji/ Semolina in a large bowl. Then add 1 cup curd to it.
- Mix them well with the help of whisk. Gradually, add 3/4 cup water to it.
- Mix well forming a smooth batter. Cover and rest for 20 minutes or until the rava absorbs water.
- Now, heat 2 tsp oil in a pan and splutter 1 tsp mustard seeds. Then add a pinch of heeng and few curry leaves to it.
- Add 1 tbsp chopped cashew nuts and 1/2 tsp red chili powder to it.
- Sauté until golden brown. Tempering for Idli is ready.
- After 20 minutes, add 1 finely chopped carrot, 1/2 finely chopped capsicum, 2 tbsp finely chopped fresh coriander leaves and then add 1 tbsp chopped roasted peanuts. Mix well in the batter.
- Pour the tempering over idli batter. Mix very well and add water only if required, to form an idli batter consistency batter.
- Just before steaming add 1/3 tsp baking soda and salt to taste. Alternatively, add 1/2 tsp of eno (fruit salt) in place of baking soda.
- Mix well till it turns frothy.
- Pour the batter immediately into the idli plate. Do not rest the batter.
- Steam the vegetable idli for 4-5 minutes in a microwave. If you are using stove-top idli stand then steam for 15 minutes on medium flame.
- After 4 minutes and 30 seconds, Idli are ready.

Tips:
- Adding Baking soda makes idli soft and spongy. Alternatively you can add Eno.
- Add vegetables of your choice to make idli nutritious like sweet corn, beans etc.
- To make it more spicy, you can add green chili and ginger.
- Quantity of water depends upon Rava, some sooji are more thick and required more water.
- Steam the Instant Vegetable Rava idli around 4 minutes & 30 seconds. If required then only steam it further more for 30 secs. Else is would be hard and not spongy.
