Typically, these Amritsari Khatte Laddu served in a leaf bowl called 'doona'. These ladoo are served with the combo of soaked and crispy chana dal fritters. You can serve it as a chat or You can also keep the chutney and toppings in small bowls on the dining table. So that each person, takes these as per his or her requirements. Instructions for how to make street style- Amritsari Khatte Wale Laddu:
- Firstly, prepare Radish leaves green chutney and red chutney as mentioned below.
- Rinse 1/2 cup chana dal/ Bengal gram split a couple of times in water. Then soak the dal for 4-5 hours or overnight.
- Add the soaked dal and 2-3 tsp prepared radish green chutney to the grinder jar.
- Blend to smooth paste. While grinding, grind in intervals. Scrape of the sides of the jar and then continue to grind. If you are not able to grind, only then add very less water.
- Transfer the ground chana dal to the mixing bowl and add 2 tbsp finely chopped green coriander, salt to taste and a pinch of baking soda to it.
- Mix them really well.
- Now dip your hand in the water, and take the small portion of prepared batter. Make a ball and flatten it.
- Start dropping them one by one to the hot oil.
- When one side is golden and crisp, gently turn over and fry the other side. Stir occasionally on low- medium flame.
- Fry the Laddu till they turn golden. Drain off the Ladoo on to kitchen towel to absorb extra oil. Ladoo/ Chana dal fritters are ready. Likewise prepare all fritters.
- Soak 4-6 ladoo in a prepared red chutney as shown in the picture.
- In individual serving bowl or plate, take 2 Ladoo which are soaked in a red chutney and 2-3 plane crispy fritters.
- Then top up with sweet tamarind chutney and prepared radish leaves green chutney. Adding sweet tamarind chutney is optional.
- Top it with grated radish and again pour 1 tsp of prepared green chutney and prepared red chutney with sliced carrot.
- Amritsari Khatte Wale Laddu are ready to serve. Enjoy delicious mouth-watering Khatte wale ladoo this Monsoon.
1. Ingredients preview of radish leaves green chutney.
2. Take 1 cup radish leaves, 10-12 mint leaves and 1 cup coriander leaves in a grinder/blender jar.
3. Add 1 inch ginger and 2 green chilies to it.
4. Then add 1/4 tsp or salt to taste, 1/2 tsp cumin powder, 1/4 tsp black salt, 1/2 tbsp sugar and 1 tsp tamarind pulp or 1 tsp lemon juice to it.
5. Add 1-2 tbsp water and grind to a smooth chutney. Radish leaves green chutney is ready. Transfer to a bowl and keep it aside.
1.Let's prepare red chutney with short-cut method, take 1/2 tamarind chutney in a small bowl and add a drop of red food color. Adding food color is optional, you can add more food colour to give this chutney little bright red color.
2. Then add 1 tbsp water and squeeze half lime. Add 1/4 tsp chaat masala to it.
3. Now, add thinly sliced carrot to it.

Tips:
- Radish leaves green chutney is very spicy, you can adjust spiciness according to your taste.
- Try to grind the dal without adding any water, else the batter will turn watery.
- The grated radish add a lot of flavor and crunch in the Laddu's. So do add them.
- Try to assemble khatte wale ladoo as soon as they are made or they are warm.
- Amritsari Khatte Wale ladoo tastes great, when served hot and crispy.
