Palak Patta Chaat is a yummy and Chatpata way, to add spinach in your meal. Even kids also enjoy this chaat very much. This recipe is very much similar to Chaat Papdi recipe. But in this recipe, each spinach leaf is coated with besan (gram flour) batter and then fried, after that these palak pakoras are topped with whisked curd, green chutney, tamarind chutney and garnished with boiled potato, onion, sev, boondi and pomegranate. Instructions for how to make Palak Patta Chaat:
- Firstly, prepare curd for Spinach Chaat recipe. Take 1/4 cup thick curd in a bowl and whisk it and then add 2 tsp powdered sugar and 1/4 tsp Black salt to it. Mix well and keep it aside.
- Now, in a bowl take 1 cup besan and 2 tbsp rice flour.
- Then add 1/4 tsp turmeric powder, 1/2 tsp red chili powder, 1/3 tsp carom seeds/ Ajwain, and 1/3 tsp salt. Mix well.
- Next, add 1/2 cup to 3/4 cup water and mix well. Quantity of water depends upon Besan you are using.
- Mix to smooth and lump free thick batter with flowing consistency.
- Take one spinach leaf. Dip the palak leaf into prepared besan batter and coat it completely.
- Then deep fry it in medium hot oil. Likewise, put as many spinach leaves as possible into the wok/Kadai.
- Stir occasionally and fry on both sides until it turns golden and crisp. Drain off the palak pakora to remove excess oil.
- Arrange palak pakoda on the serving plate. Then pour 1 tbsp curd, 1 tsp tamarind chutney and 1 tsp green chutney.
- Place diced boiled potato on each leaf and then top it with boiled black chana and finely chopped onion over it. Then sprinkle a pinch of chaat masala, freshly roasted cumin powder and red chili powder.
- Again top with 1 tbsp curd, 1 tsp tamarind chutney and 1 tsp green chutney. Furthermore, top with 2 tbsp sev and finally, garnish with chopped onion, chopped coriander leaves, boondi and pomegranate.

Tips:
- Use medium sized spinach leaves to make it look more attractive.
- Adding rice flour gives a crispy texture to pakora. you can replace it with corn flour for extra crispiness.
- You can also make this Chaat with crushed palak pakoda, but preparing with whole leaves make it more attractive.
- This piquant Palak Patta Chaat / Palak pakora chat or spinach chaat tastes great when served immediately.
