Instructions for how to make Veg Cutlet:
- Firstly, heat 1 tbsp oil in a pan and add grated/ finely chopped vegetables in it.
- Saute the vegetables for 2-3 mins. Then add finely chopped French beans, green chilies, ginger paste and green peas to it.
- Mix all the vegetables well. Cover & cook them on low flame till vegetables become soft.
- Add Salt and grounded black pepper to it.
- Add Dried Mango Powder (Aamchur)/ Chaat Masala and Cumin Coriander Powder to it.
- Add boiled and mashed potatoes to it. Mix them well with the vegetables.
- Let it cool completely.
- Now let's prepare the slurry, Take 4-5 tbsp Maida in a small bowl and add 1/4 cup water to it. Mix them well to make a smooth lump free slurry.
- Take a ball sized vegetable mixture and roll to oval shape with your greased hands.
- Likewise, prepare all the cutlets.
- Dip the prepared cutlet in the slurry.
- Then coat it with the breadcrumbs.
- Deep fry them in the hot oil on medium flame.
- Fry till golden and crisp. Keep them onto tissue paper to remove the excess oil.
- Veg Cutlets are ready to serve. Enjoy!

3. Saute the vegetables for 2-3 mins.

Tips:
- You can add vegetables of your choice to make veg cutlet more nutritious and healthy.
- If there is too much moisture in the vegetable mixture, then you can add breadcrumbs/ corn starch in the mixture.
- If the moisture is more then the cutlet will break in oil.
- You can make slurry with Corn Starch also instead of Maida.
