This recipe of Banarasi Tomato Chaat is a traditional authentic recipe and I haven't done any variation to it. Traditionally, it is prepared without onion and garlic, and you can easily prepare it during festivals and fasting days. Even though you can top it with finely chopped onion if you like. In the traditional recipe, namakpare are used for topping but if you don't have access to namakpaare, sev or crushed chips can be used for crunchiness. For fasting days, you can top it with roasted peanuts or cashew nuts for crunchiness. In this recipe, you don't need any other chaat chutneys.

Instructions for how to make Banaras Ki Tamatar Chaat:
- Firstly, heat a pan/ kadai and add 2 tbsp clarified butter/ ghee in it. Splutter 1/2 tsp cumin seeds in hot ghee and then sauté 1 inch grated ginger and 2 finely chopped green chilies.
- Next, add finely chopped tomatoes and 1/2 tsp or salt to taste to it. Saute for 2 minutes.
- Boil for 3-4 minutes or until tomatoes soften slightly.
- Then add 1/4 tsp turmeric powder, 1 tsp coriander powder, 1/2 tsp dried mango powder/ Amchur and 1 tsp red chili powder. Sauté for a minute.
- Then add 3 boiled and roughly mashed potatoes to it. Mix them really well and add 1 cup of water to it.
- Cover and cook for 5 minutes or until the ghee separates.
- Then add few more spices- 1/4 tsp black salt, 1/2 tsp ground or crushed black pepper, 1 tsp cumin powder, 1/2 tsp garam masala, 1 tbsp tamarind chutney and 1 tsp chaat masala to it.
- Now add 2 tbsp finely chopped fresh green coriander to it and mix them well.
- Tomato base is ready for Banarasi Tamatar Chaat.
- For jeera sugar syrup, In a saucepan/ vessel take 1 cup water, 1/4 cup sugar, 1 tsp roasted cumin powder and 1/4 tsp black salt.
- Mix well and boil for 3-5 minutes or until the sticky sugar syrup is formed.
- Transfer it to a bowl and Jeera sugar syrup is ready.
- For serving, take prepared tomato base in a serving plate or bowl. Top it with 1 tsp ghee and 2 tbsp of prepared jeera sugar syrup.
- Further top it with crushed namakpare, sev and coriander leaves. Then sprinkle a pinch of chaat masala and roasted cumin powder over it.
- Banarsi Tamatar Aloo Chaat is ready to serve. Enjoy!

Tips:
- The tomatoes have to be ripe, juicy and bright red in colour.
- Make sure to adjust the tanginess based on tomatoes.
- In place of Amchur, you can use tamarind pulp or lemon juice.
- Prepare the chaat with desi ghee for best flavour, as traditional recipe is prepared with Ghee.
- Top it with a generous amount of melted ghee to have the full flavour.
- For topping, you can use namak pare, sev or chips. Traditionally, it is topped with Namakpare.
- Banarsi Tamatar Chaat tastes great when the sweetness, tanginess and spiciness is well balanced.
