Instructions for how to make Namkeen Matri:
- Firstly, add the plain flour/maida, salt, carom seeds(Ajwain), 1/4 cup of oil to a mixing bowl.
- Mix all the ingredients well. Make sure the flour binds together.
- Knead the flour tight with luke warm water. Cover the dough and leave it for minimum 20 minutes.
- After 20 mins. knead the dough again and make a smooth dough.
- Make 4 big sized balls of the dough.
- Take one dough ball and roll it into 7-8 inches flat disc.
- Cut the disc into the desired shape with the help of knife or pizza cutter.
- Firstly mark straight lines and then cut it diagonally. Keep them in a plate. Likewise, prepare all the matri.
- Heat oil in a pan/wok and put the pieces into the pan.
- Put as many pieces as you can in the pan at one time.
- Fry the cubes on medium flame until they turn golden brown in colour.
- Take out the fried matri on a kitchen paper/napkin to absorb excess oil. Fry rest of matri in the same manner.
Namkeen Matri is ready. Serve them with tea or coffee and store the remaining in an air-tight container.

Tips:
- It can be made with wheat flour also. You can replace all-purpose flour with wheat flour.
