Instructions for how to make Dahi Phulki Chaat:
- Take prepared dahi phulki in a serving bowl.
- Then add 5-6 fried phulki's and crush few mint leaves and top it with finely chopped coriander leaves.
- Then top it with finely chopped onion and tomato.
- Top it with 1 tsp of green chutney and 1 tsp of tamarind chutney.
- Crush few chips and sprinkle handful Sev over it. You can use any chips of your choice.
- Sprinkle a pinch of red chili powder & roasted cumin powder. Dahi Phulki Chaat is ready to serve. Enjoy!
1. Ingredients Preview.
2. Take 1/2 cup Gram flour/ Besan in a mixing bowl and add 1/4 tsp Jeera, 1/2 tsp Red Chili Powder and 1/2 tsp salt to it.
3. Add 1 chopped onion, 1 chopped green chili, 2 tbsp coriander leaves and 1 tsp ginger paste to it.
4. Add a pinch of Asafeotida and 2 pinches Baking Soda to it.
5. Mix all the ingredients well and then gradually add 1/4 cup water.
6. Mix it well and beat the mixture in one direction for 5 minutes.
7. To check, drop the drop of the mixture into the water, if the drop floats in the water, your mixture is ready otherwise beat it for more 2 mins.
8. Once the batter is ready, keep it aside to set for 5 mins.
9. Meanwhile, prepare its Dahi/curd. Take 1 cup curd/plain yogurt in a large mixing bowl and whisk it.
10. Then add 1 cup water to it.
11. Add 1.5 tsp sugar, 1/2 tsp black salt, 1/2 tsp roasted cumin powder, salt to taste and 1/4 tsp black pepper to it.
12. Mix them well and keep it aside.
13. Now, let's prepare Phulki, drop very small balls one by one to medium hot oil.
14. Keep the flame on low to medium and stir occasionally.
15. Fry the phulki till they turn golden brown and directly transfer to the prepared curd.
16. Mix them in the curd. Cover it and keep it aside to set for at-least 45 mins.
17. For its tempering, heat 1 tsp oil in a pan and add 1/2 tsp cumin seeds/jeera and 2-3 dry red chilies.
18. Take one bowl of dahi phulki aside to prepare it's chaat. Pour the tempering over the remaining Dahi phulki.
19. Sprinkle a pinch of red chili powder, roasted cumin powder, finely chopped onion, finely chopped tomatoes, finely chopped fresh coriander leaves and crush few dry leaves of mint. You can use mint powder also.
20. Garnish it with onion slices. Dahi Phulki is ready to serve.
21. You can also enjoy Dahi Phulki as a chaat. Take prepared dahi phulki in a serving bowl.

Tips:
- Firstly, If you don't want to use Baking soda in the recipe then beat the mixture very well for 10-15 mins.
- Checking of batter in a water bowl is very important, otherwise phulki doesn't soak curd in it.
- For Dahi Phulki Chaat, you can use chips of your choice or you can use mathri also.
