Mini Pizza are very attractive and appeals to everyone. The recipe shared shows how to make the pizza dough and then bake the pizza on the pan or tawa. With the same dough you can even make 2-3 medium sized pizza also and the process/ recipe is same. This pizza bites can be prepared by anyone, as it is prepared without oven, maida/all-purpose flour and yeast. Though you can also prepare these mini pizza with your favourite pizza dough i.e. all-purpose flour or maida by following the same recipe. Even if the pizza base is made from whole wheat flour, this recipe gives a nice soft textured pizza base and one which is crisp from outside after getting baked. There is no denseness, chewiness or hardness felt in the pizza bread. These pizza can also be baked in oven and you can top it with any vegetables of your choice, like tofu, paneer, mushroom, jalapeño etc.
Resting Time for the dough is 1 hour.

Instructions for how to make Mini Pan Pizza without Maida and yeast:
- Firstly, take 2 cups of whole wheat flour/ Gehun ka Aata in a bowl.
- Then add ¾ tsp Salt, 1 tsp Sugar, 1 tsp Baking Powder and ¼ tsp Baking Soda to it. Next, add 1 cup of curd or plain yogurt to it.
- Mix well everything to knead a soft dough. Then add 2 tbsp oil and continue to knead until the dough turns soft, smooth and stretchy. Overall knead for at least 5-6 minutes.
- After kneading, tuck the dough and grease it with a little oil. Cover it and set it aside for 1 hour.
- Knead the dough again for a minute and tuck its all sides inside.
- Then prepare a log with the medium thickness and divide the dough into 8 equal parts.
- Next, take one portion of dough and tuck it without having cracks. Dust the wheat flour and roll it slightly thick keeping uniform thickness.
- Prick the rolled dough with a fork. Likewise prepare all pizza base.
- Now cook the pizza base on hot heavy based tawa or pan on low flame for 40-45 seconds. Make sure place the pricked side of pizza base on the pan.
- Roast only one side until golden. Mini Pizza base are ready.
- Next take one half-cooked pizza base and spread ½ tbsp pizza sauce. Make sure place the un-cooked side down.
- Then place shredded/ grated pizza cheese over it and top it with capsicum, onion, sweet corn and olives. Again top it with pizza cheese.
- Place the mini pizza on hot tawa keeping the flame on low.
- Cover and cook for 5-6 minutes or until the cheese melts and the base is cooked.
- Now, sprinkle some mixed herbs or chili flakes over the pizza.
- Mini Pizza is ready to serve. Enjoy hot Mini Atta Pan Pizza which doesn't include any Maida and yeast.

Tips:
- Knead the dough really well else the pizza will be hard and chewy.
- In place of store bought pizza sauce, you can use instant freshly prepared pizza sauce - by taking ½ cup tomato sauce, 1 tsp chili flakes and 1 tsp mixed Italian herbs in a small bowl and mix them well.
- The same recipe can also be prepared with All-purpose flour/ maida but the whole wheat flour is healthier option.
- Mini Pizza tastes great, when served hot and cheesy.
