Instructions for How to make Veg Mexican Pizza:
- Take one fried tortilla and spread 3-4 tsp of refried beans over it.
- Sprinkle some Mexican cheese over it.
- Then place the another crispy tortilla over the top and spread 2-3 tsp of Enchilada Sauce over it.
- Then again sprinkle Mexican cheese over it.
- Finally, sprinkle finely chopped tomatoes, green bell pepper and sweet corn over it. You can use veggies of your choice.
- Bake it in the preheated oven @ 200°C/400°F for 10 minutes or until the cheese is melted.
- Taco Bell style veg Mexican Pizza is ready to serve.

2. Firstly, take each tortilla and prick them from both the sides with fork/ knife.

3. Then heat a pan/wok and add 1/4 cup oil to it. You can use oil of your choice. Fry each tortilla on each side for a few minutes, until crispy, and set them aside on a paper towel lined plate to cool before constructing the rest of the pizza.

4. Take 1 cup boiled beans in a pan and add 1/2 cup of water to it. I have used Pinto beans in this recipe. Bring a boil.

5. Add 1/2 tsp or salt to taste and 1.5 tbsp Taco seasoning to it. If you don't have Taco seasoning, then you can use the blend of some spices- Take 2 tbsp Chili powder, 1 tbsp corn flour, 2.5 tsp cumin powder, 1.25 tsp salt, 1.5 tsp Oregano, 1 tsp Garlic powder, 1/2 tsp onion powder, 1/2 tsp Coriander powder and 1/2 tsp Paprika.

6. Mash the beans well. Heat until thickened, about 3-4 minutes. Refried beans are ready.

Tips:
- In place of Tortillas, you can you left over Chapati also.
- You can use any beans in place of Pinto beans.
- In place of Taco seasoning, you can use the blend of spices as mentioned above.
- Instead of Mexican Cheese, you can use 1/4 cup grated Cheddar cheese and 1/4 cup grated Mozzarella cheese.
- If you don't have Enchilada Sauce, you can use pizza sauce or tomato ketchup.
- Lastly, you can use any veggies of your choice like green onion, olives etc.
