Pakora recipes are very common in India are prepared in many ways. This recipe of Mixed Veg Pakora have the taste of many vegetables in one pakoda and makes a unique flavour of pakoras. These pakoras are favorite of everyone at my home. Even my kids also relish eating these fritters with Tamarind Chutney. These crisp fritters are perfect for evening snacks. Instructions for how to make Mix Veg Pakora:
- Firstly, in a large bowl take 1 sliced onion, 1 small sliced potato, 100 g chopped cauliflower and 1 cup chopped spinach.
- Then add 3 tbsp finely chopped green coriander, 1 tsp ginger paste, 1 finely chopped green chili, salt to taste, 1/2 tsp ground black pepper, 1/3 tsp carom seeds and 1/4 tsp turmeric powder.
- Add 1 cup gram flour/ besan to it.
- Mix well forming a moist mixture. Add water only if required, as veggies have enough water.
- In a medium hot oil, drop small ball sized mixture with hand or spoon.
- Put as many pakoras in the pan/kadai as possible at a time.
- Stir occasionally while frying on medium flame.
- Fry the fritters till they turn golden brown.
- Drain off over kitchen paper to remove excess oil. Likewise, prepare all pakoras. Sprinkle a little chaat masala over the pakoras.
- The crunchy Mix Veg Pakoras are ready to serve. Enjoy Mixed Vegetable Pakodas with Imli ki khatti meethi chutney or green mint coriander chutney or tomato sauce.

Tips:
- Add vegetables of your choice and availability.
- Oil should be heated properly for frying pakoras, so heat the oil well first. Then, fry the pakoras on medium flame.
- Add water only if required, quantity of water depends upon the vegetables.
- Sprinkling of chaat masala over the pakoras is optional but it enhances the flovour of fritters.
- Mix Veg Pakora tastes great, when served hot.
