Namkeen Masala Kaju has long shelf life.Deep-fried snack is integral part of Indian cuisine and has many variations and types. Each state and region has adapted and developed its own variety of these snacks which would be served on different occasions.

Instructions for how to make Crispy Kaju Namakpare:
- Firstly, Add Maida, carom seeds (Ajavain) & salt to a mixing bowl.
- Add 3 spoons of Ghee (Clarified Butter) to it and mix all the ingredients well.
- Add warm water slowly to knead a tight dough. It requires 2-3 tbsp water.
- Knead the dough for 6-7 minutes. Cover the dough and leave it for minimum 20 minutes.
- After 20 mins. knead the dough again and make a smooth dough. Take the dough on a rolling board.
- Roll it into 7-8 inches flat and thick disc. Check the thickness in the picture.
- Take one lid of any medicine bottle or water bottle. Cut the shape of cashew by putting half lid on the dough as shown in the photo.
- Cut the cashews in one line and then start cutting next line in a same way. Likewise, cut all the kaju matri.
- Heat oil in a pan/wok and put the pieces one by one into the pan. Put as many pieces as you can in the pan at one time.
- After 3 minutes, Stir them occasionally and Fry the Kaju on medium flame until they turn golden brown in colour.
- Take out the fried Kaju on a kitchen paper/napkin to absorb excess oil. Fry rest of namkeen Kaju in the same manner.
- Now, let's prepare its masala. Add roasted cumin seeds powder and dried mango powder in a small mixing bowl.
- Then add black salt and red chili powder to it. Mix them well.
- Add fried Kaju matri in a mixing bowl.
- Add prepared masala over it.
- Mix them well so that, all masala coated well on the Kaju.
- Crispy Kaju Namakpare is ready to serve.
- Enjoy it with tea or coffee and store the remaining in an air-tight container.

Tips:
- Use warm water to knead the dough.
- Adding Ghee as a moyan will make it more crispy (Khasta).
- Cut in a line to give proper shape of cashew.
- Size of the Kaju depends on the size of lid.
- Fry the matri on low-medium flame to cook it properly from inside. Don't fry it on high flame.
- Finally, mix the masala on hot Kaju matri only, or else the spices will not coat on Kaju Matri.
