As fasting food doesn't include much spices or onion or tomato, so this Jeera Aloo Recipe is much simple, quick, and easy to digest. I have also posted Aloo Katli Recipe and Fried Potato Raita Recipe which you can make on regular days.

Vrat Ke Aloo_Final

Instructions for how to make Vrat Ke Jeera Aloo:

  1. Firstly, heat 1 tbsp ghee or peanut oil in a pan/kadai. On a low flame, add 1 tsp cumin seeds/ Jeera and allow them to splutter.
  2. Now add 1-2 tbsp raw peanut and roast them on low flame for 3-4 minutes or until they are roasted.
  3. Then add finely chopped 2 green chilies and 1/2 inch chopped ginger. Sauté well. You can use grated ginger also.
  4. Next add salt to taste, 1/2 tsp grounded black pepper and 1 tsp coriander powder to it. Use Sendha Namak/ rock salt for fasting recipes.
  5. Now add 6-7 boiled potatoes, cut into cubes. Mix them well make sure cumin and spices will coat over them.
  6. Add 2 tbsp finely chopped fresh green coriander to it. Mix and turn off the flame.
  7. Then squeeze 1/2 lemon/lime over it and stir very well.
  8. Jeera Aloo for fasting is ready to serve. Enjoy these Vrat Ke Aloo with Hot Cup of tea or Kuttu Ki Roti or with Curd!

Tips:

  • You can use Ghee (Desi Ghee or Dalda) and peanut oil for fasting recipes.
  • Adding Peanuts is optional, but it gives nice crunch to potatoes.
  • You can skip coriander powder and coriander leaves, if you don’t eat them during fasting.
  • You can also add dry mango powder (amchur) or dry pomegranate seeds powder (anardana powder) instead of lemon juice. Some families use dry mango powder during fasting and some don’t.
  • Vrat Ke Aloo tastes great when prepared little spicy by adding green chili and ginger.
