Rava Kesari is a traditional Indian sweet/ dessert, prepared in all over India, with slight changes. However Kesari bath is the main dish in Karnataka cuisine, where it is served for breakfast with Upma. In North India, similar kind of dessert is prepared with almost same ingredients known as 'Sooji Ka Halwa', but it is cooked in a slightly different way and has all the flavors of Ghee only, neither saffron nor cardamom powder added to that. 1. Firstly, heat 1/4 cup ghee/clarified butter in a heavy bottomed pan.
2. Then add 1/2 cup fine semolina/ sooji/ rava to it.
3. Roast rava on low flame.
4. Roast it for 10 minutes or till it turns aromatic and slightly changes the color of sooji .
5. Side by side, take 1/2 cup sugar in a bowl. (or 1/3 cup sugar if you like less sweetness).
6. Add 2 cups of water to it and few strands of saffron/ Kesar.
7. Mix it well until all the sugar dissolves.
8. Add sugar syrup to the roasted sooji.
9. Add 1/4 tsp green cardamom powder to it. Stir it.
10. Cover and cook on low flame until the rava absorbs water. Stir on intervals.
11. Make sure the mixture is combined well and no lumps are present.
12. Add chopped almonds and cashew nuts to it. Keep stirring.
13. Mix well till the rava kesari separates from pan.
14. Delicious and soft smooth Rava Kesari is ready to serve. Enjoy!
Tips:
- For nice aroma try to use fresh homemade Ghee/Clarified butter.
- For Soft and smooth Rava Kesari, prepare it on low flame.
- Add 1/3 cup of sugar if you like less sweetness, as per your preference.
- Sooji Sheera can be stored in refrigerator for 3-4 days.
- Rava Kesari tastes great when served hot and fresh.
