Instructions for how to make Rice Kheer:
- Clean and soak rice in water for 20 minutes.
- Chopped all the dry fruits ( Almonds, cashew, pistachio and raisins) and then dry roast them for 2-3 minutes.
- Heat a large vessel/wok , add 1 tbsp of water in it and then add 1 litre milk in it. Boil the milk.
- Add in soaked rice and stir well.
- Cook for 20 minutes or until the rice grains are cooked well. At this point add sugar to it and stir well.
- Boil for 5 minutes or until the kheer turns creamy. Add saffron milk and cardamom powder to it and cook for 5 more minutes.
- Add roasted dry fruits to it.
- Mix them well.
- Cover it and cook for more 10 minutes at low flame.
- Open the lid. Creamy kheer is ready.
- Garnish it with chopped pistachio and saffron strands.
- Enjoy it hot or chilled for a week when refrigerated.

Tips:
- Try to use small rice or broken rice for kheer.
- Boil the milk on medium flame to prevent from burning.
- Adding 1 tbsp of water before adding milk also prevent from burning.
- Stir it at regular intervals.
- You can roast the dry fruits with 1 tsp of ghee (Clarified butter).
