This Mango Duet Recipe is full of mango flavour in both the layers- the first layer is rich creamy mango flavoured and the other layer is chilled mango flavour ice pop. For the ice-pop layer, I have used homemade mango juice. You can checkout  Mango Frooti Recipe for that. Alternatively, store-bought mango juice can also be used. Instructions for how to make Mango Duet Ice-cream:

  1. Firstly, take 1 cup mango cubes and 1/2 of the 3/4th cup of milk in a grinder/blender jar and blend to a smooth puree.
  2. Now add the remaining milk and 1 cup fresh or heavy cream to it.
  3. Add 1/4 cup sugar and 1/4 cup milk powder to it. Blend them to smooth and thick mixture.
  4. Pour the mango mixture to popsicle mould filling 1/2 of the mould.
  5. Cover it tightly with foil paper and freeze it for 1-2 hours or until it freezes a little.
  6. Now add the mango juice/ mango frooti in the remaining part of popsicle mould.
  7. Cover and freeze for 8 hours or overnight to set.
  8. To unmould, dip in warm water for 3 seconds and pull the popsicle. Enjoy the yummy summer treat- Mango Duet popsicles!

Tips:

  • The quantity of sugar depends on the sweetness of mango.
  • Freezing at each stage helps to get perfect layers.
  • Covering it with cling wrap/ foil paper avoids ice-cream from covering with ice crystals.
  • This Mango Duet Popsicle tastes great, as it has flavour of both mango ice-cream & mango ice pop.
