Instructions for how to make Lauki Ice-cream:
- Heat milk in a heavy based utensil and boil it. Add 1 tbsp water before adding milk.
- Now, add grated Lauki to it.
- Cook it till bottle gourd becomes soft.
- Add cardamom powder and sugar to it.
- Add green food colour to it, which gives light greenish to the ice-cream.
- Boil till it decreases in quantity while stirring continuously.
- Turn off the flame and cool it completely. Transfer the mixture in blender jar.
- Blend it to a smooth creamy mixture.
- Transfer the mixture to an air-tight container.
- Cover it foil paper/ cling wrap and then close its lid. Keep the container for 2 hours in the freezer.
- After 2 hours, take out the container from the freezer and transfer the frozen ice-cream to the blender jar.
- Again blend the frozen ice cream properly.
- Add chopped almonds and pistachio to the mixture and mix them well with the help of spoon.
- Transfer the mixture to an air tight container or Popsicle mould.
- Cover the container/ mould with foil paper and set the sticks for popsicles. Then again freeze it for 6-7 hours or overnight.
- After 7 hours, Lauki Ice-cream is frozen and ready.
- Demould it and serve it. Enjoy refreshing Lauki Kulfi/ Ice-cream.

Tips:
- Adding water before adding milk, prevents milk from burning.
- Adding green food color is optional but it gives nice color to ice-cream.
- For Kids, you can use ground dry-fruits.
- Covering it with foil paper/ cling wrap prevents the ice-cream from water crystals.
- Two times grinding the mixture makes the ice-cream creamy.
