Veg Lettuce Wraps are yummy and bursting with flavor. These wraps are great for family meal , each person can build their own fresh, delicious wrap. Just be sure to have plates or napkins available since the mixture can sometimes drip a little. To serve, allow each person to spoon a portion of the veggie mixture and some fried noodles into a lettuce leaf. Wrap the lettuce around the mixture and enjoy!
Traditionally, Asian Lettuce wraps are prepared with chicken or turkey, which makes it filling and served as a meal. So for Veg Lettuce Wraps make sure to add paneer/cottage cheese to make it filling and protein rich. For dairy free, tofu can be used in place of paneer. Instructions for how to make Veg Lettuce Wraps:
- Firstly take 1 cup boiled noodles in a bowl and then add 2 tsp corn flour to it.
- Mix gently to coat a thin layer of corn flour over the noodles.
- Spread noodles uniformly in hot oil for deep frying. Stir occasionally, keeping the flame on medium. Flip over and fry both sides until the noodles turn golden and crispy.
- Drain off the crunchy noodles and keep them aside.
- In a pan/kadai heat 2 tsp oil and sauté 1tbsp finely chopped garlic.
- Then add 1 finely chopped onion and 1 tsp grated ginger to it. Sauté them till onion turns translucent.
- Now add 1/2 cup finely chopped red and yellow coloured bell pepper or capsicum to it and sauté.
- Add 1/2 cup finely chopped carrot and 1/2 cup sweet corn to and sauté for couple of minutes.
- Next add salt to taste, 1/2 tsp grounded black pepper, 1tbsp red chili sauce, 1tbsp tomato ketchup, 1 tsp soy sauce and 1 tsp white vinegar to it. Mix all the spices and sauces well and sauté them for 1-2 minutes on high flame.
- Add 1 cup small cubed Paneer to it and cook for 2-3 minutes. Add spring onion greens and mix well. Veggies mixture is ready.
- Take one cleaned and separated romaine lettuce leaf and add a spoonful of prepared veggies mixture & some fried noodles at the center of it.
- Then wrap them by folding both the ends and join them with the help of toothpick. Likewise prepare all wraps.
- Lettuce Wraps are ready to serve. Enjoy yummy and healthy lettuce wraps as a salad or as an appetizer.

Tips:
- For non-dairy or dairy free version of veg lettuce wraps, use tofu in place of paneer/cottage cheese.
- Use any type of lettuce like iceberg lettuce, green leaf lettuce etc. But Romaine lettuce is considered to be more healthier than other lettuce types.
- Use vegetables of your choice like green beans, mushrooms etc. Add more vegetables to make Lettuce Wraps more nutritious.
- Try to use rice noodles or whole wheat noodles or vermicelli for fried noodles.
- You can also skip the fried noodles but it gives nice crunch to the wraps.
- Lettuce Wraps tastes great, when they are freshly prepared.
