Hakka Noodles liked by everyone, either kids or grownups. It can also be served as main course with Veg Manchurian Gravy. Noodles recipe is an open-ended recipe, which can be cooked with vegetables of your choice and even you can adjust the spice level also as per your taste. But Hakka Noodles tastes great when prepared little spicy.

Instructions for how to make Vegetable Hakka Noodles:
- Firstly, heat 8 cups of water in a large vessel and add 1 tsp salt and 2 tsp oil in it.
- Once the water comes to a boil, add 200 gm Hakka Noodles to it.
- Stir and boil for 3 minutes or until the noodles turn al dente.
- Drain off the noodles and rinse with cold water to stop the cooking process and remove the starch. Keep them aside.
- Next, heat 2 tbsp oil in a wok/kadai and add 3 finely chopped garlic cloves,1 inch finely chopped ginger, and 2 slit green chilies to it and stir fry for a minute.
- Then add the 3 to 4 spring onions, 1 onion, 1/2 capsicum, 1/2 red bell pepper and 1 carrot julienne. Stir fry for 3-4 minutes or until the vegetables shrink slightly.
- Now add 2 tbsp soy sauce, 2 tbsp tomato sauce, 1 tbsp red chili sauce, 1 tsp vinegar, 1/2 tsp salt and 1/2 tsp ground black pepper to it.
- Stir fry until the sauces combine well and add boiled noodles.
- Toss well again and stir fry for a minute or two.
- Finally, garnish it with spring onion greens. Veg Hakka Noodles are ready to serve. Enjoy!

Tips:
- Make sure not to overcook the noodles, as they turn mushy while stir-frying on high heat.
- Rinse the cooked noodles in fresh water very well. This method stops the cooking process and removes the starch.
- Add vegetables of your choice to make noodles healthy and nutritious.
- You can cut the veggies, the way you like cut into julienne or shredded or finely chopped.
- Try to keep the crunchiness of vegetables, so do not overcook the veggies.
- Adjust the amount of green chili and red chili sauce as per your taste.
- Veg Hakka Noodles tastes great when served hot and spicy.
