Basically, Jalfrezi/ Jafraze is a medium-hot Indian dish consisting of paneer or chicken with fresh chili peppers, tomatoes, and onions. You can add vegetables of your choice to make it more nutritious. This dry paneer curry is also good for kids. Instructions for how to make restaurant style Paneer Jalfrezi:
- Firstly, heat 2 tsp oil in a pan or wok/kadai and splutter 1/2 tsp cumin seeds.
- Then add two thinly sliced onion to it and sauté for 2 minutes.
- Add 2 finely chopped green chilies and 1 tsp ginger paste/ grated ginger. Sauté them for a minute.
- Next add 1/2 thinly sliced capsicum and continue to sauté for couple of minutes.
- Then add 1 thinly sliced tomato to it.
- Now, add salt to taste, 1/4 tsp red chili powder and 1 tsp coriander powder to it. Mix all the spices well.
- Next add 2 tbsp tomato sauce and 2 tsp white vinegar to it. Mix them well.
- Add paneer pieces and give a gentle mix without breaking paneer. Cook it for 2 more minutes, so that paneer absorbs flavours and gets cooked well.
- Finally, add finely chopped fresh green coriander leaves and 1/4 tsp garam masala to it.
- Crush kasuri methi over it and Paneer Jalfrezi is ready to serve. Enjoy Paneer Jalfrezi hot with chapati, naan or paratha.

Tips:
- Always use fresh Paneer for this recipe else jalfrezi will not taste great.
- You can add vegetables of your choice like carrots, baby corn etc. but always thinly sliced the veggies.
- Sauté the vegetables on high flame to retain the crunchiness.
- You can also add ginger garlic paste or ginger julienne in place of ginger paste.
- Paneer jalfrezi tastes great when served hot with roti or paratha.
