Sabudana/ Sago/ Tapioca Pearls based recipes have always been an integral part of Indian cuisine. It is generally used during the vrat or fasting days as it contains required nutrient to make a complete meal. So, I have prepared this recipe of Sabudana Fruit Drink which is very nutritious and refreshing, taken during any fasting days like Navratri, Shivratri or even during Janamashtami Upvaas. I have prepared this recipe for my Thursday fasting day. It can also be served during Iftar celebrations also. Earlier I have shared Sabudana Kheer Recipe also.

Instructions for how to make Sago fruit drink or Sago fruit dessert:
- Firstly, rinse 1/2 cup sabudana or sago 2-3 times, then soak them in 1/2 inch water layer for 1 hour.
- After 1 hour sabudana becomes bigger and soft, to check take 1 pearl in your first finger and thumb and press it with your thumb, if it has soaked properly then it is mashy, as shown in the picture.
- Next, in a pot or kadai heat 1.5 cups of water and bring a boil and then add soaked sabudana to it.
- Stir and boil for 10-12 minutes or until the sabudana turns translucent.
- Drain off the sabudana once it is cooked completely then pour cold water over it to stop its cooking process and this also helps to rinse off excess starch and prevents from sticking.
- Sago pearls are ready. Keep them aside.
- Take a large pan/kadai and heat 3 cups of milk and 2 tbsp milk powder to it.
- Stir continuously, make sure there are no lumps. Stir and boil until the milk reduces slightly.
- Then add 1/3 cup sugar and 1/2 tsp cardamom powder to it. If you like more sweet then you can add upto 1/2 cup of sugar.
- Mix them really well and boil for 5 minutes on low flame.
- Transfer milk to a large mixing bowl and cool completely. It is advisable to refrigerate the milk as the chilled milk gives a nice taste.
- For preparing Sabudana Fruit drink, add the prepared sago pearls to the prepared chilled milk.
- Then add 2-3 tbsp chopped almonds and cashew nuts to it.
- Finally, add chopped fruits of your choice. I have added chopped apple, green grapes, black grapes, strawberries, mangoes and 2 tbsp pomegranate seeds to it.
- Mix them really well with the milk. Pour the prepared Sago Fruit drink to the serving glasses.
- Garnish them with more chopped fruits and nuts. Refreshing Sabudana Fruit Drink is ready to enjoy!

Tips:
- Make sure to cook sabudana really well, else it will not taste good.
- Adding milk powder to milk is completely optional, it just gives it a rich flavour.
- Saffron can also be added in place of cardamom powder.
- Add or skip any fruit as per your preference, adding more different coloured fruits make it healthy, colourful and attractive.
- I have made this drink for fasting days, so didn't add any tutti-frutti or jelly, but you are free to add if you want.
- Sabudana Fruit Dessert or Sago Fruit Drink tastes great, when served chilled.
