Lemon Rice also known as chitranna or nimmakaya pulihora is a crunchy, flavorful and tangy rice recipe, which tastes so yummy. It can be ideal lunch box recipe or can also be served for breakfast. Instructions for how to make Lemon Rice:
- Firstly, heat 1 tbsp oil in a pan/ kadai and add 2 dried red chilies. Then add 1 tsp mustard seeds and let them splutter.
- Next add 1 tbsp chana dal and 1 tsp urad dal to it. Roast them on low flame for 3-4 minutes.
- Then add few curry leaves and 1 tsp ginger paste to it. Roast them on low flame for 2 more minutes.
- Add 2 tbsp roasted peanuts to it.
- Now add salt to taste, 1/4 tsp turmeric powder and 2 tbsp finely chopped green coriander to it and sauté.
- Then add 2 cups of cooked rice to it and mix gently, making sure everything is combined well. Turn-off the flame.
- And add 1- 1.5 tbsp lemon juice to it.
- Mix gently.
- Delicious, flavourful and crunchy Lemon Rice are ready to serve. Enjoy!

Tips:
- Any non-sticky variety of rice can be added. Leftover rice works very well in this recipe.
- Adjust the amount of chili based on your spice level. You may use green chilies in place of dry red chilies.
- Peanuts add a lot of texture and crunch in lemon rice. With the peanuts, you can also add cashew nuts if you like.
- Lemon Rice tastes great, when prepared slightly tangy and spicy.
