Fruit custard is the perfect summer dessert to be served after Lunch or dinner or even in parties. I have used eggless readymade custard powder. There are many flavors available in the market like mango, pineapple, banana etc. but I have used the classic Vanilla flavor.
Custard powder is just corn flour with flavoring agent added to it. If you don't have custard powder, you can easily prepare it with corn starch and vanilla essence/ extract. Any seasonal fruits goes really well except citrus fruits or melons. Even dry-fruits like chopped almonds, cashew nuts and pistachio also goes really well with it.

Instructions for how to make Fruit Custard at home:
- Firstly, take 2 cups of milk in a thick-bottomed pan.
- Bring the milk to a boil while stirring occasionally.
- Meanwhile, take 2 tbsp of vanilla custard powder in a bowl and add 3tbsp cold milk to it. Make sure do not add hot milk as custard powder will curdle.
- Stir very well to make a smooth paste without any lumps.
- Keep the flame on a low and then add the custard paste with one hand and stir the milk continuously with the other hand.
- Then add sugar and cardamom powder, stir very well so that the sugar dissolves.
- Keep on stirring often while the custard is cooking, so that lumps are not formed. Cook for about 5 to 6 minutes on a low flame.
- The milk changes colour to dark yellow and it thickens slightly. Adjust the consistency by cooking for long time. Do not over cook as it turns thick after cooling.
- Transfer to a bowl and cool completely. Make sure to cover or stir occasionally, else a thick layer will be formed over custard milk.
- Once the prepared custard milk has cooled completely, add chopped fruits of your choice. Mix gently, cover and chill for 2 hours or more.
- Once the fruit custard has chilled, it turns more thick and creamy.
- Garnish with some more fruits and soaked & chopped almonds. Chilled Fruit custard is ready to serve. Enjoy!

Tips:
- Keep the flame on a very low and then add the custard paste.
- While adding custard paste, stir the milk continuously with the other hand, else they will form lumps.
- Adding Cardamom powder is totally optional.
- You can use any flavour of custard powder, Vanilla custard powder goes really well.
- Use more seasonal fruits to make fruit custard more delicious.
- Avoid adding citrus fruits like orange, mausami and melons, as they release lots of water and make custard watery.
- Adding almonds are optional, you can also add chopped cashew nuts or pistachio as per your choice.
- Fruit Salad with custard tastes great, when served chilled with lots of fresh fruits.
