Broken wheat is generally called as dalia in North India. Daliya/Dalia is used in India for making many sweet as well as savory dishes. Instructions for how to make Daliya Pulao:
- In a large pan/kadai, heat 1 tbsp ghee/ clarified butter.
- Then add 1/2 cup broken wheat/ dalia to it. Mix it with ghee and begin to roasting the dalia on low flame.
- Stir continuously while roasting. Roast for 3 to 4 minutes on a low to medium-low flame. The dalia will become aromatic and the color will change.
- Then add 1.5 cups of water to it. Stir and mix very well.
- Cover and cook on low flame for 10-12 minutes or until the dalia is cooked properly.
- Meanwhile, heat 1/2 tablespoon ghee/clarified butter in a pan. Keep flame to medium-low and add 1 tsp cumin seeds in the hot ghee and let them crackle. Then add 1 finely chopped green chili.
- Add 1 chopped onion to it and sauté till the onion becomes translucent.
- Now add 1 finely chopped carrot, 1/2 finely chopped capsicum/ green bell pepper and 1/2 cup chopped French beans to it.
- Further add 1/2 cup broccoli and 1/4 cup green peas to it. Mix them well.
- Then add salt to taste, 1/2 tsp ground black pepper and 1/2 tsp coriander powder to it. Mix well.
- Cover the frying pan and fry for 4-5 minutes on a low flame. Veggies are ready.
- After 12 minutes dalia has been cooked properly and absorbed all water.
- Now add the prepared veggies to it. Also add 2 tbsp finely chopped coriander leaves.
- Mix vegetables with cooked broken wheat very well. Finally, squeeze 1 lime and mix it well.
- Dalia Pulao is ready to serve. Enjoy fresh and hot Broken Wheat Pulao, along with chutney or curd.

- Add vegetables of your choice to make it more nutritious and healthy.
- Dalia Pulao can also be made without onion.
- Adjust spice level according to your preference.
- Adding lime juice enhances the flavour of Broken Wheat Pulao.
