Boondi Papad Curry is the ideal recipe for the situations like whenever you don't know what to cook or you want a change from your routine curries or you have shortage of time. Instructions for How to make Boondi Papad Sabzi:
- Firstly, heat 1 tbsp oil in a pan/Kadai and then add 1/2 tsp cumin seeds and 1 bay leaf to it. Let the cumin seeds splutter.
- Add 1 finely chopped onion , 1 green chili and 1 tsp ginger paste to it. Sauté them till the onion turns golden brown.
- Add 3 grated tomatoes and salt to taste to it.
- Add 1/2 tsp turmeric powder, 1/2 tsp red chili powder, 1 tsp coriander powder and 1/4 tsp dried mango powder(Amchur) to it.
- Roast them till it starts separating oil and tomatoes become mashy.
- Then add 1.5 cups water to it. Boil the gravy for 4-5 mins.
- Finally, add 1 crushed papad and 1 cup boondi to it. Mix gently.
- Boondi Papad Curry is ready. Garnish it with finely chopped fresh coriander leaves. Enjoy it with Chapati/ Parantha or Rice.

Tips:
- You can use any Boondi, homemade or market bought.
- You can use Papad of your choice- urad dal papad or moong dal papad / spicy or mildly spicy papad.
- Adjust the spice level according to your taste.
- Adjust the consistency of gravy according to your preference.
- Mix Boondi gently.
