This Vegetable Soup recipe is very simple and prepared with tomatoes, apple and any veggies of your choice or any spare veggie that you have in the fridge. This is a quick recipe as it doesn't require any fine chopping of vegetables. Just roughly chop all the veggies and pressure cook in the cooker. This soup is a perfect as a weight loss recipe because it doesn't require any oil/ butter/ ghee. This soup is even perfect for babies and kids, only skip black pepper for them. Instructions for preparing Vegetable Soup in Pressure Cooker:
- Firstly, add 4 roughly chopped tomatoes in a pressure cooker and switch on the flame.
- Then add 1 peeled & chopped apple to it.
- Next add 3-4 carrots and 1 bottle guard/ ghiya/ lauki roughly chopped to it.
- Also add more vegetables like 1/4 beetroot, 7-8 French green beans or any vegetables of your choice.
- Add salt to taste and 3-4 cups of water to it. Mix them well.
- Make sure all veggies must covered with the water.
- Pressure cook for 5 whistles on medium flame.
- Let the pressure settle down on its own and then open the lid of the cooker. Vegetables has become soft and mushy. Let them cool completely.
- Then transfer the cooked veggies to the blender/grinder jar. Blend to a smooth puree.
- Then sieve the puree and discard the residue. For extra fiber, don't sieve the puree. Then get the soup to a boil.
- Vegetable Tomato Soup is ready to serve. Add crushed black pepper for more flavour & enjoy!

Tips:
- You can add more vegetables of your choice like green peas, corn, cabbage, potato etc.
- You can also add spinach or broccoli, but then the colour of the soup is little greenish or brownish.
- Must add an apple to this soup, it enhances the flavour of soup very much.
- You can serve this soup with fried bread sticks or with paneer cubes.
- Vegetable Tomato Soup tastes great when prepared with only salt & black pepper and served steaming hot.
