Instructions for how to make Sweet Corn Soup:
- Firstly, prepare sweet corn paste by taking ½ cup sweet corn in a grinder jar with 2 tbsp water.
- Blend it to smooth paste.
- Next, in a large pan/ kadai heat 2 tsp oil and sauté 3 finely chopped cloves garlic and 1/2 inch grated ginger to it.
- Add 4 spring onions chopped, ¼ cup finely chopped carrot and ¼ cup finely chopped beans. Sauté them for 2-3 mins.
- Add 1/2 cup sweet corn to it. Sauté for 2 more mins or until vegetables are slightly cooked.
- Further add 3 cups of water to it. Stir well and boil for 5 minutes.
- Then add prepared sweet corn paste. Mix it well and again boil for more 5 mins.
- Add 3/4 tsp salt and 1/2 tsp ground black pepper to it.
- Now prepare a corn flour slurry by mixing 1 tsp corn flour in 3 tbsp of water. Mix to a lump-free mixture.
- Pour the corn flour slurry. Stir and boil until the soup thickens.
- Switch off the flame and add 1 tbsp fresh cream to it. Adding fresh cream to sweet corn soup is totally optional.
- Pour the corn soup in soup bowls and enjoy Sweet Corn Soup hot garnished with chopped spring onion greens or ground black pepper.

Tips:
- Add vegetables of your choice to make the soup more healthy and nutritious.
- Adding fresh cream is optional but it gives more richness to soup.
- For making this soup, I do not use cream styled sweet corn from the tins, as I don’t like the texture.
