There are many variations in this recipe, you can also prepare Potato 65, Gobhi 65, Mushroom 65 or Tofu 65 in the same manner. I will soon share some of these recipes.

Instructions for how to make Paneer 65:

  1. Firstly, take 3 tbsp plain flour/maida and 4 tbsp corn flour in a large bowl and then add 1/4 tsp turmeric powder, 1/2 tsp coriander powder, 1/2 tsp garam masala, 1/2 tsp salt and 1.5 tsp Kashmiri Red Chili powder to it.
  2. Mix all the dry ingredients well and keep 1 tsp of this dry mix aside.
  3. Add 18 Paneer cubes to it and coat well with the dry mix.
  4. Then add 1 tsp lemon juice and 1 tsp ginger garlic paste to it.
  5. Then add 2-3 tbsp water and coat paneer with it well. Allow to marinate for about 10 minutes at room temperature.
  6. Drop each coated paneer cubes to the medium hot oil for deep fry.
  7. Stir occasionally and fry until the paneer turns golden brown and crispy.
  8. Drain off the fried paneer over a kitchen towel to remove excess oil. Keep them aside.
  9. Take 2 tbsp plain yogurt/curd in a small bowl and then add 1 tsp of prepared dry mix to it. Mix well make sure there are no lumps.
  10. Now, in a large pan/kadai , heat 2 tsp oil and add1 tsp mustard seeds, 3 cloves finely chopped garlic, ginger juliennes of 1 inch ginger, 5-6 hand torn curry leaves and 2 green chilies cut into slit.
  11. Add 2 tbsp tomato sauce, 1 tsp chilli sauce and 1/4 tsp salt.
  12. Add prepared curd mixture and 3 tbsp water to it. Mix well until the curd combines well.
  13. Add 2 drops of red food colour and mix well.
  14. Finally, add fried paneer cubes to it and mix well to coat all paneer cubes with prepared sauce.
  15. Garnish Paneer 65 with chopped fresh coriander leaves and enjoy!

Tips:

  • Make sure Paneer should be fresh, you can use any homemade or store-bought paneer.
  • You can also add rice flour or gram flour/besan in place of plain flour/maida.
  • Adding red food colour is totally optional.
  • Make sure to whisk the curd well before adding, else the curd may curdle.
  • Paneer 65 tastes great when it is prepared tangy & spicy, and served hot.

Paneer 65 Recipe – Hotel Style
