Instructions for how to make Namkeen Matri:

  1. Firstly, add the plain flour/maida, salt, carom seeds(Ajwain), 1/4 cup of oil to a mixing bowl.
  2. Mix all the ingredients well. Make sure the flour binds together.
  3. Knead the flour tight with luke warm water. Cover the dough and leave it for minimum 20 minutes.
  4. After 20 mins. knead the dough again and make a smooth dough.
  5. Make 4 big sized balls of the dough.
  6. Take one dough ball and roll it into 7-8 inches flat disc.
  7. Cut the disc into the desired shape with the help of knife or pizza cutter.
  8. Firstly mark straight lines and then cut it diagonally. Keep them in a plate. Likewise, prepare all the matri.
  9. Heat oil in a pan/wok and put the pieces into the pan.
  10. Put as many pieces as you can in the pan at one time.
  11. Fry the cubes on medium flame until they turn golden brown in colour.
  12. Take out the fried matri on a kitchen paper/napkin to absorb excess oil. Fry rest of matri in the same manner.
    Namkeen Matri is ready. Serve them with tea or coffee and store the remaining in an air-tight container.

Tips:

  • It can be made with wheat flour also. You can replace all-purpose flour with wheat flour.
  • You can use 1/4 cup of Ghee/ clarified butter as moin instead of oil.
