The recipe for seviyan upma have many variations and may differ with vegetables or spiced added to it. I have added more vegetables to make this recipe more healthier and in this way kids can also eat vegetables. I have added vegetables like onion, capsicum, green peas,carrots etc. You can even add more vegetables like french beans, broccoli, cabbage, cottage cheese, corn etc. I have given some suggestions below which will help you to solve some of your problems like sticky seviyan, mashy seviyan. Below is the detailed recipe of Seviyan upma with all the instructions and pictures.
Instructions for how to cook Vermicelli/Seviyan Upma:
- Firstly, Take a pan/ Kadai. Dry roast the vermicelli for 5 minutes.
- Next, in a large vessel boil water and add the roasted vermicelli.
- Add 1 tsp oil to it.
- Then add salt and boil it for 3 minutes or until vermicelli turns soft.
- Strain off all the water with the help of strainer and allow to cool completely.
- Next, Take a pan/kadai and heat 2 tsp oil and add mustard seeds.
- Then add curry leaves, green chili and peanuts and roast them till turn crunchy on low flame.
- Add onions to the pan and saute till slightly translucent.
- Add all three colours of capsicum and saute for a minute.
- Then add carrots and peas. Saute all the veggies for a minute or two.
- Further add salt, black pepper, coriander powder.
- Then add turmeric powder and mix all the spices well.
- Cover it with a lid and cook for 2-3 minutes or till vegetables turn soft.
- Now its time to add cooked seviyan in it.
- Mix gently. Always remember do not over mix it as vermicelli will get mashed.
- Add chopped coriander leaves.
- Finally add lemon juice of one lemon in it. Mix them well.
- Semiya/Vermicelli upma is ready to serve. Enjoy the healthy breakfast as it is full of vegetables.

Tips:
- Before boiling, I did dry roast the seviyan to make it more healthy. You can use 2 tsp oil/ ghee also to roast seviyan.
- If you are using roasted vermicelli then ignore roasting step.
- You can add or ignore any vegetables to make it of your choice.
- Make sure to add the roasted vermicelli only when the water starts to boil. otherwise the vermicelli will be sticky.
- Last and important point, don't overcook the seviyan while boiling, otherwise vermicelli will turn mashy.
