Instructions for how to make tutti frutti:
- Take rind of one watermelon and peel the skin (green part) of it as shown in the picture.
- Cut the watermelon rind into small cubes.
- Boil the watermelon rind cubes in 4 cups of water for 10 minutes at high flame. Then the cubes turn into semi-transparent.
- Drain off the water and keep it aside.
- Now in a large pan/kadai add sugar and 3 cups of water and dissolve the sugar at high flame.
- Now add semi cooked watermelon rind cubes and stir. Boil it for 15 minutes stirring in between.
- When the sugar syrup reduces to 1 string consistency. Switch off the flame.
- Divide the cooked cubes into 4 parts along with little sugar syrup.
- Add red, green and yellow food colour to each part and one part I want white so keep it as it is. Add vanilla essence to green one and rose essence to red one. Mix them well. Allow them to soak for 8-10 hours making sure cubes absorb all the colour.
- Now drain off the sugar syrup and allow them to dry over napkin/kitchen towel for couple of hours.
- Take all tutti frutti on plate, keep all the colours separate and let them dry under sun or fan for overnight.
- Once the tutti-frutti dries off completely it will not be sticky. You can mix all the colours together. Finally, its ready to consume or you can refrigerate it in the air tight container for later use.
