Instructions for how to make Sprouted Moong Dal Parantha:
- For stuffing add sprouted moong dal in a mixing bowl. You can use grounded sprouted moong dal coarsely/crushed in the mixer grinder. But here I am using whole sprouts.
- Then add finely chopped onions to it.
- Add all other ingredients like coriander leaves, curry leaves, green chili, salt, black pepper, coriander powder, carom seeds in the mixing bowl.
- Stir all the ingredients and mix them really well.
- Make a small lump from the kneaded dough and roll giving it a round shape.
- Dust with some dry flour and roll out into round parantha. Place 2-3 tsp stuffing over the rolled parantha.
- Lift the rolled parantha from all the sides and close the stuffing. Gently press the dough ball to spread the stuffing evenly.
- Now roll out it into a round parantha as shown in the picture.
- Spread some ghee over the hot tawa and place the rolled parantha over it.
- When the parantha is roasted from one side, flip the side and let it roast from the other side as well. Now apply some oil over this side and spread evenly. Flip the side and apply some oil on this side as well. Roast the prantha until it gets golden brown spots on both sides.
- Likewise prepare rest of the paranthas as well. Serve the hot sprouted dal pranthas with curd, butter, chutney, tomato ketchup, pickle and even with jam for kids.
