Instructions for how to make lobia masala curry:

  1. Clean and wash lobia and soak it in water for 3 hours.
  2. Now lets prepare its masala by adding oil and cumin seeds in a pressure cooker.
  3. Now add finely chopped onion to it. Cook it till golden brown.
  4. Add freshly prepare tomato puree to it. (Grind finely: tomato, green chili and ginger)
  5. Add salt to it and fry it till the tomatoes become soft and the mixture appears granulated.
  6. Add Coriander powder to it.
  7. Add turmeric powder and red chili powder to it and mix them well.
  8. Add soaked lobia to it.
  9. Add 2-3 cups of water to it and pressure cook for 2 whistles then let the mixture to boil for another 10-15 minutes, on low flame or until lobia is cooked completely.
  10. Open the cooker after it's pressure has released and add garam masala to it.
  11. Lobia curry is ready to serve. Take it out in a bowl and garnish it with fresh coriander leaves. Enjoy it with chapati or rice.

Tips:

  • If the gravy is more watery after opening the cooker, mash few of the lobia to get thickness in the curry.
  • Lobia masala recipe thickens once cooled.
  • You can also add potato before pressure cook.
