Chole Katlambe is a famous street food in Dehradun, like Chole Bhature in North India. It is made plain (with ajwain), or spicy. These Katlambe is mostly paired with Chole, but can be served with Aloo curry, chutney or pickle also. Even my kids enjoyed it with chocolate syrup. The taste of these katlama is very different, which are neither puffy like puri and bhature nor like mathri. But have a very unique taste and super delicious when served hot with Chole Masala.

Katlambe_Final

Instructions for how to make Katlambe at home:

  1. Firstly, take 2 cups of plain flour/ maida, 1/2 tsp of salt and 2 tsp of oil in a large mixing bowl and mix them really well.
  2. After that pour water gradually into the flour and knead a soft dough. Cover and rest the dough for 20 minutes to set.
  3. After 20 minutes, knead the dough again after applying oil to your hands and prepare a smooth dough.
  4. Divide the dough into 2 equal portions. Then take 1 portion and divide it into 7 equal parts and cover them.
  5. Pick one part and make it round like Peda. Dust the wheat flour and roll it into a thin sheet of 5-6 inches in diameter.
  6. Similarly, roll out remaining 6 sheets also.
  7. Take a rolled sheet and apply ghee to it. Sprinkle wheat flour and spread it all over the sheet.
  8. Place or stick another sheet over this one and do the same with it till you get 6 layers.
  9. Dust the prepared sheet with flour as we have to roll it into a big sheet.
  10. Cut strips from the rolled sheet and brush ghee, and sprinkle wheat flour and carom seeds all over them.
  11. Roll the strips one by one, add carom seeds at the top and press it to give a peda-like shape.
  12. Take one prepared peda on a rolling board and roll it into a thin sheet with the help of rolling pin.
  13. Gently Slide the rolled sheet in the oil. Press it down with a spatula as soon as it comes up to the surface. 
  14. Fry Katlama till golden brown from both sides. Each Katlama will take 2-3 minutes to fry.
  15. Super delicious Katlambe are ready to serve. Enjoy them hot with chole, aloo currychutney, or pickle.

17. Check the oil temperature, a little more than medium hot oil is required for frying Katlama. The flame would be medium too. Gently Slide the rolled sheet in the oil.

Tips:

  • Carom seeds/ Ajwain can be sprinkled in between the layers also.
  • In place of wheat flour, you can also use maida or rice flour to dust and sprinkle.
  • In place of ghee, oil can also be used for spreading between the layers.
  • A little more than medium hot oil is required for frying Katlama.
  • Katlambe tastes great, when served hot with Chole.
