Jaggery Caramelized Lotus Seeds Recipe is a healthy and good substitute of caramelized popcorn and Gur Revri, as this recipe is much easier to prepare at home. Makhana or Phool Makhana is rich in calcium, protein, carbohydrates, phosphorous, iron, thiamine and zinc. Makhana have a neutral taste. So you can prepare them sweet snack as I have shared a sweet snack recipe or you can also prepare them spicy or masala Makhana. I will soon share this recipe also. Give this light and nutritious snack recipe a try as it is perfect for chilled winter days.

Instructions for how to make Gur Til Makhana:
- Firstly, heat a pan and add 2 tbsp sesame seeds to it. Dry roast them for 2 mins. on low flame. Then take them out in a plate and keep aside.
- In the same pan, add 1 heaped full cup of Makhana/fox nuts and dry roast them on low flame for 4-5 mins or until they become crunchy and keep them aside.
- Now, in a pan heat 1 tsp desi ghee/ clarified butter and then add 1/4 cup or 75 gms jaggery/gud to it.
- Then add 1 tbsp water and cook till jaggery melts. Also add a pinch of green cardamom powder to it.
- Stir on low flame, till it turns frothy.
- Check the consistency, by dropping syrup into a bowl of water, it should form a soft ball, else boil for another minute and check.
- Switch off the flame. Add roasted makhana and mix well. Make sure all Makhana coated well with jaggery.
- Grease a plate with ghee and sprinkle all roasted sesame seeds, then transfer hot jaggery coated makhana to the plate.
- Mix well all the lotus seeds with spoon, so that sesame seeds also coat on the makhana. Cool completely.

Tips:
- Always dry roast sesame seeds and lotus seeds on low flame, else they will burn.
- Consistency of jaggery syrup is very important otherwise it becomes sticky.
- At the end, if Makhana stick to each other then gently separate them with your hands.
- Finally, Gud makhana recipe tastes great when prepared with fresh ones.
