Traditionally tootti frutti cake recipes are prepared with egg yolk which but this recipe does not contain eggs and is mainly prepared with curd / yogurt and vanilla essence. I have added mixed fruit essence also to give it more fruity flavour. The colourful tutti frutti makes it very colourful and gives it a nutty bits. These candied bits are not made from different fruits rather it made from raw papaya or watermelon rind. You can use homemade tutti frutti or the tutti frutti available in the packets in the market. Here I have used homemade tutti frutti made up of watermelon rind. The combination of yogurt and all purpose flour gives a light yellowish creamy colour to this eggless tutti frutti cake. For a moist and spongy cake please give it a try.
Instructions for how to make Eggless Tutti frutti Cake:
- Firstly, in a large mixing bowl take curd.
- Add sugar in the mixing bowl.
- Then add baking powder, baking soda and salt.
- Mix them well with help of whisk. Some bubbles will form and keep it aside for 5 mins.
- Take tutti frutti in a separate small bowl and add 1 tsp maida/all purpose flour in it.
- Mix the maida with tutti frutti.
- Meanwhile grease the pan with some non-sticky oil followed by butter paper.
- Add Vanilla essence and mixed fruit essence in the mixture we have previously made.
- Add oil/ butter to that mixture.
- Further sieve maida/ all purpose flour in the mixture.
- Mix well using cut and fold method. Don't over mix the batter.
- Add tutti frutti and give it a good mix.
- Now the batter is ready. Transfer the cake batter into the cake mould or bread mould. Level up the batter and pat the tray twice to remove the air bubbles incorporated into the batter.
- Place the cake tray into preheated oven for 10 mins at 180 degree Celsius or 350 degree Fahrenheit. Bake the cake at same temperature for 38-40 minutes.
- Allow the cake to cool completely.
- Then cut it into thick slices.
- Finally, the tutti frutti cake is ready. Enjoy the cake at tea-time or store it in the airtight container for a week. Keep it refrigerated during summer days.
