Dry Garlic Chutney also known as Lasun Khobre Chutney in Marathi. You can use grated dry coconut also in place of desiccated coconut. I ahve used Kashmiri Red chili powder to give it bright colour. You can add cumin seeds and fenugreek seeds (Methidana) also for its another variation.
Instructions for how to make Dry Garlic Chutney:
- Firstly, Heat 1 tbsp oil in a pan. Add garlic cloves and saute on low flame until it turns golden brown.
- Add peanuts to it and saute till peanuts turn crunchy.
- Add sesame seeds to it.
- Add Kashmiri Red chili powder and coriander powder to it.
- Add salt and desiccated coconut to it.
- Saute it well for 2-3 minutes.
- Cool it completely and transfer it to the blender/ grinder jar.
- Blend/grind it to coarse powder without adding water.
- Dry Garlic Chutney is ready to serve with vada pav/ batata vada.

Tips:
- Make sure to roast garlic on low flame else it remains raw from inside.
- Add red chilli powder as per your taste but spicy chutney tastes great.
