Eggless Assorted Cookies Recipe for Christmas- With One base dough: Vanilla Butter Cookies, Linzer cookies, Chocolate Sugar Cookies + Royal Icing Recipe without eggs.
Sugar Cookies are really easy and fun to prepare at home. Even kids really enjoy decorating these cookies for Christmas. I have not shared any instructions for decorating the cookies because these cookies can be decorated in any way. All these cookies have been decorated by my little Angels. So there is no right or wrong way to decorate Christmas cookies. Give this recipe a try and have fun decorating these cookies with your kids.

Instructions for preparing Assorted Sugar Cookies- Base Dough:
- Mix butter and condensed milk well with the help of spatula. The butter and condensed milk should be creamed together.
- Then add 1/6 tsp salt or 2 pinches of salt and 1 tsp Vanilla Essence to it.
- Gradually add 300g or 2 cups All-purpose flour/Maida to it. Mix Well.
- Divide the batter into three equal parts.
Vanilla Butter Cookies:
- Set a piping bag over the cup and fill it with the 1 part of the dough. I have used Star nozzle to pipe the cookies.
- Press and release small portions of a cookie dough on to tray lined with baking paper. Top it with sprinkles. Adding sprinkles is optional.
- There is no need to refrigerate the cookie mixture for these cookies.
Linzer Cookies:
- 1 cup Almond Flour is added to the second part of the cookie mixture.
- Knead the dough to make soft and smooth dough.
- Place the dough over butter paper and press it with your fingers. Then place another butter paper sheet over the dough.
- Roll the dough with rolling pin to a flat sheet with 1/2 inch thickness. Keep this sheet in a refrigerator for at least 30 mins.
Chocolate Sugar Cookies:
- firstly bloom the cocoa powder. Take 2 tbsp cocoa powder in a small bowl and then add 1 tbsp hot water to make chocolate paste. Make sure the paste is lump free.
- Add this chocolate paste and 3/4 cup Wheat flour to the third part of the cookie mixture.
- Place the dough over butter paper and press it with your fingers. Then place another butter paper sheet over the dough. Roll the dough with rolling pin to a flat sheet with 1/2 inch thickness. Keep this sheet in a refrigerator for at least 30 mins.
Cookies Cutting & Baking:
- After refrigerating the cookie dough sheets, cut them with cookie cutter of your choice like Round, Star, Gingerbread man, stocking, Snowman etc.
- Bake the cookies in preheated oven at 170°C/340°F for 12-15 minutes. Do not over-bake the cookies. The moment the edges look slightly golden, take the cookies out of the oven and cool completely.
Royal Icing without Eggs:
- Sieve 3/4 cup icing sugar and 1 tbsp corn flour. Then add 1 tsp lemon juice and 1 tbsp milk to it.
- Mix well until desired consistency is achieved. Royal Icing is ready for the icing on the cookies.
Decorate the cookies with prepared icing, jam and sprinkles as you like. Assorted Sugar Cookies for Christmas is ready to serve. Enjoy!

Tips:
- Star Nozzle is optional, you can just fill the batter in piping bag and prepare it as shown in the already shared Vanilla Butter Cookies Recipe.
- For Chocolate Sugar cookies, you can add all-purpose flour also in place of Wheat flour, but wheat flour makes them little more healthy.
- Royal Icing is optional, that is just for fun. Cookies are delicious even without icing.
- Adding color to royal icing is also optional.
