Green Masala Poha is a Gluten Free recipe. This poha dish consisits of so much nutrients as it is made with flattened rice/ Poha, which is a wholesome meal, good source of carbohydrates, packed with iron, rich in fibre, a good source of antioxidants and essential vitamins. It is known to be good for those who have diabetes, skin and heart problems. It also includes lemon juice which has vitamin C.
The green color of this Hara Bhara Poha or Green Poha comes from freshly ground coriander leaves(cilantro) and mint leaves, which gives it wonderful aroma and flavour too. Coriander leaves are rich in Vitamin C, Vitamin K and protein. They also contain small amounts of calcium, phosphorous, potassium, which lowers bad cholesterol and increases the levels of good cholesterol. A very good food for digestive system, coriander promotes liver functions and bowel movements. It is good for diabetes patients too, as it can stimulate the insulin secretion and lower the blood sugar levels. Mint leaves are used for adding flavour and they have multiple health benefits.

Instructions for how to make Green Poha/ Hara Bhara Poha:
- Firstly prepare Green masala, take 1 cup fresh coriander leaves and 1/4 cup fresh mint leaves in a grinder jar.
- Then add 1 green chili and 1/2 inch ginger to it.
- Next add 1 tsp sugar, 1 tbsp lemon juice, 1 tsp cumin seeds/ jeera, salt to taste and 1/4 cup grated fresh coconut to it.
- Add 2 tbsp water and grind to smooth puree.
- For Hara Bhara Poha, heat 2 tbsp oil in a large pan/ kadai and roast 5-6 cashew nuts (halved) and keep them aside.
- In the same oil add 1 tsp mustard seeds, 5-6 curry leaves and 1 handful peanuts to it. Roast the peanuts on low flame till they become crunchy.
- Now, add 1 medium- sized chopped onion and 1/2 chopped capsicum/ green bell pepper to it. Sauté for around 5 minutes.
- Then add prepared Green Masala puree to it. Sauté for 2 minutes.
- Then add 1/4 cup green peas, and sauté for 2 more minutes.
- Place 2 cups of poha in a sieve and add water into it to rinse. Add rinsed poha to the pan.
- Mix them gently on low flame, make sure poha is mixed well with green masala. Add more salt as per taste.
- Cover and cook for a minute.
- Healthy and delicious Green Masala Poha is ready to serve.
- Garnish the Green Poha/ Hariyali Poha with the roasted cashew nuts. Squeeze lemon/ lime as per your taste. Enjoy!

16. Healthy and delicious Green Masala Poha is ready to serve.

Tips:
- You can adjust the quantity of coriander leaves and mint leaves as per your taste.
- Always use thick flatten rice/ thick poha for this recipe.
- To make a perfect poha, don't soak it in the water. Just rinse it properly.
- You can add any green vegetables of your choice like French beans, broccoli etc.
- Flavorful Green Masala Poha tastes great when served hot.
