Hot soups are great in cold weather as there number of fresh vegetables and greens available in the local markets. Hot & Sour Soup is one of my favourite soup as it is perfect combination of spiciness and sourness . The hot element comes from ingredients like chili sauce and black pepper. Some people like to add grounded white pepper instead of black pepper. The sour element comes from the vinegar. You can add any good quality vinegar. In this recipe I have used regular white vinegar, you can use Chinese vinegar if you want. You can add veggies of your choice. No boiled or fried noodles are used in this recipe, which makes it different from Manchow Soup. Adding corn starch slurry is optional, but if you want restaurant style Hot & Sour soup, then you must add it.

Instructions for how to make Hot and Sour Soup:
- Firstly, in a large pan/ kadai heat 1 tbsp oil and stir fry 2 finely chopped garlic cloves, 1/2 inch grated ginger and 1 finely chopped chili.
- Add all the veggies- 2 tbsp finely chopped white part of spring onion, 1 carrot, 1/4 cup finely chopped cabbage, ½ capsicum and 1/4 cup finely chopped beans to it.
- Stir fry for 2 minutes or until the veggies are half cooked at high flame.
- Add 3 cup water and boil for 3-4 minutes.
- Then add 2 tbsp soy sauce and 1 tbsp vinegar to it.
- Add 1.5 tsp chili sauce. If Chili Sauce is not available then add 2 tsp red chili powder to it.
- Add 1/2 tsp ground black pepper, 1/2 tsp salt and 3/4 tsp sugar to it.
- Mix well and boil for one more minute.
- Now, prepare corn flour slurry by mixing 2 tbsp corn flour in 1/4 cup of water.
- Pour the slurry into the soup and mix well.
- Continue to boil for 2 more minutes or until soup thickens slightly.
- Finally, add 2 tbsp finely chopped green part of spring onion and enjoy Hot and Sour soup.

Tips:
- You can add vegetables of your choice like mushrooms, beetroot etc. I have added all the main veggies required for this soup recipe.
- Add salt according to your taste as soy sauce and chili sauce also contains salt.
- If Chili Sauce is not available then add 2 tsp red chili powder to it. But in traditional recipe, chili sauce is added.
- In place of corn flour/starch, Arrarot can also be added for slurry.
- Adding slurry to the soup is optional but it gives thickness to the soup like restaurant style.
- Hot and Sour Soup tastes great when served hot and spicy.
