In Punjabi, we call carrot halwa as Gajrela. I often make gajrela in the winter season. In this recipe, I have used orange-coloured carrots as I do not have access to the red carrots in US. If you have access to those, you should always use red carrots for Carrot Halwa. More arm work is needed to make this halwa as you have to first grate the carrots and then slow cook them and keep on stirring them on regular intervals. To reduce your workload, you can finely chop them in the vegetable chopper instead of grating carrots. Furthermore, I suggest using a heavy bottomed wok/pan to make the halwa.
In North India, Carrot halwa is served hot or warm. But at some places this halwa is served chilled with vanilla ice cream. Halwa can also be set as a cupcake and topped with whipped cream. Give this recipe a try and serve the way you enjoyed it most.

Instructions for how to make Gajar Ka Halwa:
- Firstly, take 1kg carrot, peel and grate them. Add 1 tablespoon of clarified butter/ghee and 2 cardamom pods in a wok and then add grated carrot to it.
- Cover and cook on low-medium flame for 10 mins. Stir occasionally.
- Add chopped almonds and cashew nuts to it and mix well.
- Then add 1.5 litres milk to it and give a good stir.
- Bring a boil and cover it. Cook on low-medium flame. Stir occasionally.
- Continue to boil until the carrots are cooked well and milk reduces. Mix well.
- Cook until the whole halwa mixture becomes dry. The milk should evaporate completely and you will see fine milk solids in the carrot halwa. Turn off the flame and Gajar ka Halwa is ready.
- Pour the Halwa in a serving bowl and garnish it with chopped almonds and cashew nuts. Enjoy palatable Carrot Halwa!

Tips:
- Instead of grating carrots, you can very finely chop them in the vegetable chopper.
- Adjust the amount of sugar-based on the sweetness of the carrot and your preference.
- Keep stirring in between to prevent from burning.
- You can store Halwa in the refrigerator for a week.
