Instructions for how to make Pesarattu/ Sprouted Moong Dal Dosa:
- Firstly, add 1 cup sprouted moong dal in a grinder jar and then add 2 green chilies, 1/2 inch piece of ginger, little water and 2 tbsp coriander leaves to it.
- Grind to smooth batter.
- Transfer the dosa batter to a large bowl and add 2 tbsp Rice flour. Mix well.
- Cover & keep it aside for 15-20 mins.
- Take 1 finely chopped onion in a bowl and then add 1 grated carrot and 1/4th finely chopped capsicum to it.
- After 20 mins, Add salt to taste. Mix the batter well and get to dosa batter consistency. Add water if required.
- Heat a tawa/griddle and grease it with oil and then sprinkle some water and then wipe the tawa with kitchen towel/ napkin.
- Pour a ladleful of the batter on a griddle and spread it in a circular motion thin circle.
- Sprinkle 2 tsp veggies and 1 tsp oil over the moong dal dosa. Press gently, so that the veggies stick to dosa.
- When it cooks it starts leaving the sides of the tawa.
- Then fold it and transfer to a serving plate.
- Pesarattu/ Sprouted Moong Dal Dosa is ready serve. Enjoy hot dosa with Peanut Chutney or Kara Chutney.

Tips:
- You can also prepare Pesarattu with whole moong dal also. Soak the whole moong dal for at-least 7-8 hours and rest of the steps are same. But sprouted moong dal dosa is more healthier.
- If you don't have rice flour then soak 2 tbsp of rice for 3-4 hours and grind them with the sprouts.
- In place of rice, you can also add 2 tbsp of Chickpea flour/ Besan or 2 tbsp of rice cream/ idli rava.
- You can skip carrot and capsicum if you want.
- To make it more crispy, cook it on low flame.
- It tastes great when served hot and crisp.
