Instructions for how to make Vegetable Poha:
- Firstly, Heat 2 tbsp oil in a wok and add 1 tsp mustard seeds, let them splutter then add handful roasted peanuts.
- Add chopped onion to it and cook till onion becomes translucent.
- Add chopped/grated carrot and bell pepper to it.
- Add finely chopped green chilies and green peas to it. Saute for 2 mins.
- Add 1/2 tsp turmeric powder, 1/2 tsp black pepper and salt to taste to it. You can add Red Chili Powder also. Mix all the spices well.
- Add chopped fresh coriander leaves and paneer cubes to it. Mix them well & cook for 2 more mins.
- Place poha in a sieve and add water into it to wash.
- Then add washed poha to the wok. Mix all the veggies with poha well on low flame.
- Switch off the flame and add lemon juice to it and mix it well.
- Delicious and healthy Vegetable Poha is ready to serve. Enjoy!

Tips:
- To make a perfect poha, don't soak it in the water. Just rinse it properly.
- You can add any vegetables of your choice like potato, broccoli, corn etc.
- If you are not using roasted peanuts, then roast them till peanuts turn crunchy on low flame.
