Instructions for how to prepare Chat Masala at home:
- In a heavy-bottomed pan take coriander seeds, cumin seeds, carom seeds and fennel seeds.
- Roast them on low flame until the spices turn aromatic.
- Transfer them to a bowl and keep it aside.
- In the same pan add dried red chilies, cloves & dried mint leaves. Roast them on low flame until they turn aromatic.
- Keep them aside in the same bowl.
- Cool all the spices and transfer them to the grinder jar.
- Then add citric acid and Asafoetida powder (Heeng) to the jar.
- Grind them to a coarse powder.
- Now add all the other spice powders (Ginger powder, Dried Mango powder, Grounded black pepper, Black slat & salt) in the jar.
- Blend all the spices to make a fine powder.
- Sieve the spice blend with the help of strainer.
- Chat Masala is ready. You can store this chat masala in an airtight container for up to 6 months. You can use this chat masala in chaat, in salads, sweet corn etc.
With the spices that are mentioned in ingredients section, 100 grams of Chaat Masala is prepared.

Tips:
- Make sure to roast the spices on low flame till they turn aromatic.
- You can use whole black pepper also in place of grounded black pepper but you must roast it while you are roasting dried red chilies.
