Mango Rice is a simple raw mango flavoured rice recipe. It can be ideal lunch box recipe or can also be served for breakfast. This is my favourite recipe and I have learnt this recipe from one of my friend, who is from Hyderabad. In Karnataka, grated coconut is added to this recipe. You can easily prepare this recipe with leftover rice.
Instructions for how to make Mango Rice:
- Firstly, heat a pan/wok and add oil to it.
- Add in dried red chilies, mustard seeds and a pinch of hing.
- Add chana dal and urad dal to it. Allow to splutter.
- Add curry leaves and peanuts to it.
- Add raw mango to it .
- Add turmeric powder and salt to it. Saute it for a minute.
- Add fresh chopped coriander leaves to it.
- Mix them well.
- Add boiled rice to it.
- Mix it gently without breaking rice grains. Cover and cook it on low flame for 2 minutes, so that, rice absorbs all the flavours.
- Mango Rice is ready to serve. Enjoy it!

Tips:
- Always use a raw or tender mango for this recipe.
- Adjust the amount of raw mango based on its sourness.
- If you are preparing this recipe with freshly boiled/cooked rice make sure it has to be dry and doesn't contain any moisture.
